Why white oak, specifically
Oak covers a family of woods, and white oak is the one with a party trick: its pores are naturally plugged by growths called tyloses, which block moisture from traveling through the wood. That single trait is why whiskey barrels and boat hulls are white oak and not red. In a piece of furniture it translates to a wood that shrugs off spills and humidity swings better than most.
It is also simply hard. At 1,350 on the Janka scale, white oak out-measures walnut at 1,010 and mango at 1,070, which is why it turns up on furniture meant to take abuse: dining tables, dressers, bed frames.
The look
White oak heartwood is light to medium brown, often with a faint olive cast, with straight grain and a coarse, open texture. It takes stain evenly and finishes well, which is why you see it everywhere from pale Scandinavian-style finishes to deep fumed browns.
The detail worth knowing at a showroom: when white oak is quartersawn, the wide rays that run through the log get sliced lengthwise and show up as shimmering flecks across the board, called ray fleck. It is the signature of quartersawn oak and of the Arts and Crafts furniture built from it. Not every piece is cut that way, so when you see the fleck, you are looking at the more labor-intensive cut.
